No crust -pizza
Happy almost December! I wanted to share a quick recipe I tried out this week and I really ended up loving it.
Everyone loves a good pizza, am I right? Sadly we can't be having that everyday without some unwanted consequences... I for one get bloated really easily, especially from pasta but it happens with white bread and other carbs too. This recipe combines my favorite thing in pizza (stringy cheese) and sustainible carbs that will keep you going all day without feeling bloated. You can easily sub out the ingredients to whatever floats your boat but here's how I made my "no crust" pizza.
Ingredients:
Sauce:
Minced beef
Lean panchetta
garlic
salt
pepper
chicken broth
olive oil
tomato sauce
Toppings:
Mushrooms
Thyme
Mozarella
Gruyere
Crust:
Sweet potato slices
Preheat oven to 200C. I started my sauce by cooking the garlic in some olive oil on medium heat. After a couple minutes I added the panchetta and cooked until I saw some color on the meat. Moving on, I added 300g of minced beef and browned that in the pan (the meat doesn't have to be cooked all the way through since it is still going in the oven). Finally I poured in 250ml of store bought tomato sauce along with some chicken broth, salt and pepper.
I let my sauce simmer on low while I prepared my sweet potato crust. I used slices about 0,5cm thick to line the baking dish and drizzeled some olive oil along with a pinch of salt on top. I poured the sauce on top of the sweet potatoes and added my toppings. I always like to put the cheese on last.
I cooked my pizza in the oven for approximately 25 minutes. The first 20 minutes I like to keep the dish covered with foil so the cheese doesn't burn. During the last five minutes I remove the foil to get some color on top.
And that's how I make my no crust -pizza/casserole! You can easily customize this recipe with your favorite toppings or change out the crust part too. If you're on a low carb diet the crust can be left out too but I don't do that because carbs are the main source of energy for athletes. I hope you try this at home!
